The atmosphere in La Barbacane is one of charm and elegance – from its beautiful interior of wood panels and stained glass windows to the enchanting view, it allows views of the hotel's gardens and the Citadel ramparts, with a glimpse of Carcassonne town in the distance.
La Barbacane offers a wide range of tempting dishes, created with imagination, flair and artistry by Executive Chef,
Jérôme Ryon, and Pastry Chef,
Régis Chanel. The emphasis is on a sophisticated skilful re-thinking of traditional cuisine and the use of ingredients of the highest quality.
